Summer Corn Chowder - Sommer-Mais-Suppe



Yield: 6 servings


Ingredients

8 ears fresh sweet yellow corn, husked and silks removed and kernels cut from cob
3 Tbsp butter
5 slices bacon, cut into 1/4 to 1/2-inch pieces
1 medium yellow onion chopped (1 1/2 cups)
1/4 cup all-purpose flour
1 clove garlic, minced
5 cups water
1 lb Yukon Gold potatoes, cut into 1/2-inch pieces
1/2 tsp dried thyme
1 bay leaf
Salt and freshly ground black pepper
1 cup half and half
1 Tbsp honey
2 - 3 Tbsp chopped fresh chives
Shredded cheddar cheese, for serving (optional)

Directions

Melt butter in a large pot over medium heat. Add the onion and bacon and cook, stirring frequently, until onion has softened and just starting to brown around edges, about 8 - 10 minutes. Add in the flour and garlic and cook 1 1/2 minutes. While whisking, slowly pour in 5 cups water. Bring mixture to a boil, stirring constantly, then stir in corn kernels and potatoes. Add in thyme and bay leaf and season with salt and pepper to taste. Bring to a light boil, then reduce heat to medium-low and allow to simmer, stirring occasionally, until potatoes are tender, about 20 minutes. 

Remove bay leave then transfer 2 1/2 cups of the chowder to a blender and blend until smooth. Stir the mixture back into the pot then stir in half and half and honey. Sprinkle each serving with chives and optional cheddar.

Mexikanische Ofenkartoffeln mit Avocado

Ofenkartoffeln müssen nicht immer gleich daherkommen. Diese hier schmecken sogar nach Mexiko!

Zutaten

  •   800 g Kartoffeln, vorzugsweise Drillinge (kleine Kartoffeln)  
  • 1 Prise(n) Jodsalz   
  •   125 g (Abtropfgewicht) Kidneybohnen (Konserve)   
  •   190 g Maiskölbchen, sauer eingelegt (Konserve), Abtropfgewicht   
  •   500 g Tomaten, frisch   
  • 2 TL Pflanzenöl   
  •   300 g Tatar, roh   
  •   100 g passierte Tomaten   
  • 1 Spritzer Tabasco   
  • 1 TL Koriander, gemahlen   
  • 1/2 TL Kreuzkümmel/Cumin   
  • 80 g Cheddar/Chester, 50 % Fett i. Tr.   
  • 100 g Avocado   
  • 1 TL Zitronensaft   

Anleitung

  • Kartoffeln waschen, längs halbieren und mit Schale in Salzwasser ca. 15 Minuten garen. Backofen auf 180° C (Gas: Stufe 2, Umluft: 160° C) vorheizen. Kidneybohnen abspülen und mit Maiskölbchen abtropfen lassen, Maiskölbchen in Stücke schneiden. Tomaten waschen und in Würfel schneiden. Öl in einer Pfanne erhitzen und Tatar darin krümelig braten. Tomatenwürfel, Maiskölbchenstücke, passierte Tomaten und Kidneybohnen zugeben, kurz aufkochen und mit Salz, Tabasco, Koriander und Kreuzkümmel abschmecken. Sauce in ein tiefes Backblech geben.
  • Cheddar reiben. Kartoffeln abgießen und mit der Schnittfläche nach unten auf die Sauce geben. Mit Cheddar bestreuen und im Backofen auf mittlerer Schiene ca. 20–25 Minuten garen. Avocado halbieren, Stein entfernen, Fruchtfleisch aus der Schale lösen und in feine Würfel schneiden. Avocadowürfel mit Zitronensaft mischen, Ofenkartoffeln damit bestreuen und servieren.

Zutaten

  • 1 TL Rapsöl   
  •   1 Zehe(n) Knoblauch, gehackt/gepresst   
  •   400 g Tomaten (Konserve)   
  •   425 g (Abtropfgewicht) Kidneybohnen (Konserve)   
  •   425 g (Abtropfgewicht) Mais (Konserve)   
  •   425 g passierte Tomaten   
  • 2 TL Chilipulver/Chiliflocken, nach Geschmack   
  • 1 Prise(n) Oregano   
  • 1 EL Paprikapulver   
  • 1 Prise(n) Pfeffer   
  • 1 Prise(n) Jodsalz   
  • 4 EL Käse, gerieben, 30 % Fett i. Tr.   

Anleitung

  • Öl in einem Topf erwärmen. Knoblauch unter Rühren etwa 2 Minuten andünsten. Tomaten, Bohnen, Mais, passierte Tomaten, Chilipulver, Oregano, Paprika und Pfeffer dazugeben. Gut verrühren.
  • Chili 5 Minuten kochen lassen, gelegentlich umrühren. Abschmecken und mit Käse bestreut servieren.

Slow Cooker Potato and Corn Chowder - Kartoffel-Mais-Topf

The easiest chowder you will ever make. Throw everything in the crockpot and you're set! Easy peasy!

Ingredients

  • 24 ounces red potato, diced
  • 1 (16-ounce) package frozen corn
  • 3 tablespoons all-purpose flour
  • 6 cups chicken stock or vegetable stock
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Kosher salt and freshly ground black pepper, to taste
  • 2 tablespoons unsalted butter
  • 1/4 cup heavy cream

Instructions

  • Place potatoes and corn into a slow cooker. Stir in flour and gently toss to combine. Stir in chicken stock, thyme, oregano, garlic powder, onion powder, salt and pepper, to taste.
  • Cover and cook on low heat for 7-8 hours or high heat for 3-4 hours.* Stir in butter and heavy cream.
  • Serve immediately.
Notes
*Cooking time may need to be adjusted depending on the thickness of the potatoes.
